Backstory:
The viral tortilla wrap emerged like a CRAZY trend out of TikTok and IG and man it looked sooo good! And like all viral food trends, I just HAD to try it. Some people said it wasn’t good, and chalky and floury (and I’m guessing it’s coz they used readymade tortilla?). So I tried to make my own tortillas (out of all-purpose flour/maida as I didn’t have cornmeal) It came out SOOOO GOOOOOD!! You need about 2-3 of these to be happily fed. My whole family loved it so much and it’s fairly simple to make so enjoy!!
You Need:
For the wrap: (makes 10)
- 2½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 2 Tablespoons oil
- ¾ cup water (room temp)
For the filling:
- 2 small onions, sliced (or 1 large)
- 2 small tomatoes, sliced (or 1 large)
- 1 capsicum
- Ketchup
- Aloo tikki/meat cutlet
- Cheese slices
- 1 tbsp butter (for frying)
Optional additions:
- Jalapenos
- Olives
- Hot sauce
- Mayo
- Green chutney
- Baked beans
How To:
- Sift flour, baking powder together into a big bowl.
- Add salt, oil and water and mix it well
- If it’s too sticky, add some more maida and knead it until it forms a well-shaped ball
- Let it rest for 15 minutes
- While that’s resting, slice your veggies and keep your condiments/sauces ready
- Divide your dough into 10 balls and keep them at the side
- Put some flour on a flat surface/rolling board and roll out your tortillas – the bigger and thinner the better
- Heat a flat pan with some oil (make sure it covers the entire surface so the tortilla doesn’t stick to the pan)
- Fry your tortilla until slightly golden brown on both sides (don’t fry it too much coz you gotta fry it up again)
- After it cools a bit, make a half cut at the bottom of the tortilla
- Put 4 portions of meat/protein, sauce, veggies and cheese and fold it over as shown in the video
- Heat a pan with butter, and fry the tortilla on both sides until golden brown and crispy. Enjoy!
Tips:
- Make the tortillas as thin as possible. If you make it too thick, it will be hard to fold it properly and all the filling falls out
- Make sure you have nice hot butter on the pan for that crispy crunch on the outside, otherwise it will get soggy
- You can sub the maida for wheat flour/atta but it won’t be as soft as the maida one, but definitely will be healthier
