Backstory:
I had a packet of Meishi Rice noodles leftover (200 gms) so I just threw this together and the entire family enjoyed it and I hope you like it too!
Ingredients:
- 6 strips of bacon
- 1.5 tbsp ginger garlic paste
- 2 onions, sliced
- 2 carrots (small, sliced)
- 8 beans, sliced
- 1 capsicum, sliced
- 3 eggs
- 200 GMs noodles
Sauce:
- 2.5 tbsp soya sauce
- 1 tbsp green chilli sauce
- 1.5 tbsp schezwan sauce
- 1 tsp honey
- 1 tsp vinegar
- Salt to taste
How to:
- Cut your bacon into squares and fry in a deep pan for about 5 mins (don’t add oil before frying, bacon releases lots of fat)
- While that’s cooking, put your noodles into a vessel filled with boiling water
- After the bacon fat is cooked, but before the bacon turns crispy – add the sliced onions & ginger garlic paste
- When onions are translucent, add carrots & beans and stir fry
- When beans turn bright green and are about 3/4 cooked, add capsicum and cook for 3-4 minutes
- While that’s cooking, check on your noodles. If cooked, drain and rinse with cold water to prevent it from over cooking
- Push veggies to the side and then crack 3 eggs and quickly scramble them
- Add in your cooked noodles and mix well
- Add the sauce and stir for 2-3 minutes
- Check salt (add if more needed) and then enjoy!
Tips:
- You are welcome to add more veggies – they carry the most amount of flavour and would really amp up the dish
- Make sure your noodles aren’t over cooked or it could get mushy in the end
- Add 1 tsp fish sauce if you like more of a umami hit
