Backstory:
This recipe is a combination of the Goan sausage recipe by my friend Lizane D’Souza, and another sausage chilli recipe Louella Martiz shared with me on Instagram. It absolutely elevates plain sausages to a lip-smacking Goan sausage chilli fry. I love eating this after gym with either rotis or in lettuce rolls. Super duper easy, and a great recipe to impress your friends with at a house party. Trust me, it disappears in seconds!! The recipe below serves 1 (as usual, haha)

Ingredients:
- 5 sausages
- ½ tsp jeera (cumin)
- 1 tbsp ketchup
- ½ tsp soya sauce
- 2 tsp chilli powder
- Turmeric powder (a pinch)
- 1 tsp salt
- 1 onion*
- 5-6 garlic pods*
- 1 tomato*
(*you can make this without these ingredients/steps, but I find that it tastes SUPER with these)
How to:
- Slice onions & garlic as thinly as you can. (big chunks are also ok, it’s just that it will take longer to cook)*
- Heat a pan with 1 tsp oil and when it’s hot, add the jeera (cumin) & turmeric. Cook until all the jeera pops. Stand a little far away, oil might splatter on you.
- Add onions & garlic and fry until golden brown*
- Add chopped tomato and cook down until the tomato became maroon-ish in colour. It should almost have a thick jam-like consistency*
- Add sliced sausages and fry it a little, until it gets those nice golden brown marks
- Add half cup water, salt, ketchup and soya sauce and let it boil until the water evaporates
- Let the mix sear for a minute or two
- Serve with rotis/bread/fried rice/in lettuce rolls & enjoy!
Tips:
- Crucial step: caramelise the onion & garlic well. It packs an incredible flavour
- Keep an eye on your pan when it’s boiling, make sure it doesn’t boil to a point where it burns the soya
- Best to try it with plain sausages since there’s a lot of boiling etc involved, cheese sausages might lose their flavour & dry out
