Backstory:
This is one viral food trend I have been wanting to try for some time now. Just two ingredients?? Sign me up!! But I also read a lot of reviews that said that while it sounds good in theory, it tastes pretty bad or dull. SOOOOO I tweaked the recipe a bit to make it more pleasant and yummy to eat, and of course worth the effort. Hope you enjoy!! You need:
- 500 ml icecream, melted
- 1 cup maida/flour
- 11/4 tsp baking powder
- 1/2 tsp salt
- 21/2 tbsp powdered sugar
- Food colour (optional – blue & pink)

How to:
- Preheat your oven to 180C
- Make sure your ice cream is melted, like proper liquid. Otherwise it will not mix smoothly with the maida & will leave big lumps
- Sift maida, baking powder into the icecream and add salt & sugar
- Mix it gently – you can use a whisk or a spatula – if you overbeat it, it will get too dense
- Mix until the flour & icecream is well combined and there is no leftover powder/lumps. Taste and see if it’s sweet enough for you. If not, add more powdered sugar
- Divide batter into two bowls
- To one add about 7 drops of pink food colouring and mix until the colour is evenly mixed
- To other bowl, add 7 drops of blue food colour and mix until well combined
- Line a bread pan with parchment paper. If you don’t have a bread pan, you can use a small cake tin
- Pour blue batter into the pan (until about 1 inch thick)
- Smooth the top and pour pink batter into the pan (again, 1 inch thick)
- Repeat the same process until all the process is layered
- Don’t mix it up, as that will disturb the colour layers
- Smooth the top gently and use a fork to create a pattern just on the top layer (don’t dip your fork in too much)
- Bake at 180c for 35-40 minutes
- Test if it is done by inserting a toothpick in, if it comes out clean and not sticky then it is done. If it is sticky, then bake for another 5 minutes
- Let it cool and then peel off the parchment paper, cut and serve! (best with vanilla icecream)

Tips:
- Use only powdered sugar. If you use granulated sugar, it will need more vigorous mixing to melt and that could leave you with a very dense batter
- You can also add rainbow sprinkles if you don’t have food colouring, to get a nice colourful output
- Swap vanilla icecream with other flavours and add more additives in. Eg if you use chocolate icecream, add chocolate chips and nuts if you want
- This is BEST with icecream, and would be quite dry and dull-tasting if eaten by itself
