Creamy Bacon Fritata (The One Where A Disaster Turned Delicious)

Backstory:

ok so, you know how they say every cloud has a silver lining? THIS fritata was my golden lining out of an utter disaster. I bought 60 eggs and usually it’s given in trays right, but this shop gave it to me in plastic packets. And unfortunately ONE got cracked on the way home. I was like ok, I can make a quick omlette. And when we were transferring the eggs into a bigger container at home, someone’s elbow swiped one packet and the whole thing crashed down. Luckily it was all contained in the packet (otherwise cleaning that up would’ve been HELL!). SO what to do with 6 eggs? Make a fritata! And duuuuude it turned out so well – perfect crispy top, creamy centre, not too eggy (i dont like eggs much) and packed with veggies. SUPER DUPER – the family loved it!

What you need:

  • 6 eggs
  • 2 strips of bacon (can swap for chicken sausages/paneer)
  • 2 onions
  • 6 cloves of garlic
  • 1 carrot
  • 1 tomato
  • 1/2 broccoli (optional)
  • 3 tbsp milk
  • 1 tbsp oregano/pasta seasoning
  • 50 gms cheddar cheese
  • 30 gms mozzarella (for grating on top)
  • Salt & pepper to taste

How to:

  1. Preheat oven to 180C
  2. Start off by chopping all your vegetables. It’s better you cut it small small because it’s more pleasant to eat than big chunks. It also cooks much faster
  3. Heat a pan and add chopped bacon to it. DO NOT pre-add oil to it because bacon gives out a LOT of oil
  4. Fry bacon until golden brown then transfer into an oven-safe/microwave-safe glass dish
  5. Don’t throw the leftover bacon oil from the pan (it has soooo much flavour)
  6. Heat up the bacon oil and add garlic and onion to it
  7. Saute it until onion becomes translucent (should take about 4-5 minutes)
  8. Then add your carrots and fry until the carrot becomes a brighter orange (basically it gets cooked and softened)
  9. Add in your broccoli and tomato and stir fry for another 2 minutes.
  10. Switch off the heat and add salt & pepper to taste (about 1 tsp pepper and 1 1/2tsp salt)
  11. Add the veggie mix to the glass box with the bacon
  12. Now whip your eggs until frothy. Add the milk to make it fluffier
  13. Add 1 tsp salt and a little pepper and mix well
  14. Add the eggs to the container with veggies and bacon and mix well
  15. Add pasta seasoning/oregano and mix.
  16. Crumble cheddar cheese into it and make sure it;s evenly distributed. Cheddar cheese gives that proper ‘cheese’ flavour as compared to mozzarella so that’s why I like adding it into the mix
  17. Top the mixture with grated mozzarella (just enough to cover the top) This is to make sure it has a nice crispy top
  18. Bake in your oven for 20 minutes
  19. After that, place it on the topmost rack and change the setting to ‘broil/toast’ for 5 minutes. This is so that you can that nice crispy top
  20. Let it cool down, and serve hot with ketchup/schezwan sauce.
A thin layer of mozzarella for that crispy top!

Tips:

  • If you don’t have an oven, you can bake this in a microwave as well. The only difference is you may not get AS crispy a top layer, but it’ll still have the same flavour ๐Ÿ™‚
  • You can add mozzarella instead of cheddar cheese into the mix as well. Cheddar has a sharper flavour so it works well with the bacon, mozzarella is more lighter but gives it that stringy cheese texture which will remind you of pizzzaaa
  • If you don’t eat pork you can use chicken sausages or paneer instead. But make sure to add oil to your pan before frying it! You can also skip it entirely and just have a veggie fritata too. Work with whatever you have ๐Ÿ™‚
